Halvo are the new and environmentally focused coffee roasters based in the UK.


 

Launched in 2021 by Bailey White, Halvo are on a mission to showcase delicious coffee while trying to make the coffee industry a little more eco-friendly.


During the unprecedented times of 2020, Bailey White found himself drinking a lot more coffee at home than usual, and started to notice the amount of plastic bags, non recyclable packaging, and lack of environmental support in the coffee industry.

 

Thinking there must be a better way, he founded Halvo and set out to make coffee more sustainable for everyone.

Halvo believe we should put our planet, and people before our profits.

When starting out they made sure to make this a core foundation in their business. They’re currently one of a small handful of coffee roasteries in the UK to:

  • Donate a minimum of 1% of their sales to 1% for The Planet

  • Use plastic-free packaging for their bags and packaging

  • Planting 4 trees for every kilogram of coffee they roast

  • Donating 20p for every kilogram of green coffee they buy to World Coffee Research

  • Actively reducing their carbon emissions and where they can't, they offset these, becoming carbon neutral.

  • Open and transparent about their business and operations

Origin

The Atsabe coffee from Halvo coffee roasters originates from the Atsabe region of Timor Leste.

Firstly, all the producers Raw Materials Timor-Leste work with are informed of best picking practices, with the intention of only ripe cherry being picked and sold for processing.

This cherry is first floated in water, to separate the fruit by density.

The higher the density, the higher the quality of the coffee. This leaves the low density, less mature cherries to float to the surface, which are easily removed from the water.

Though not used for export, these cherries are processed separately, and sold to the local market.

The station staff then meticulously hand-sort the freshly picked and well-sorted cherry, removing all damaged or underripe fruit by eye. The cherry is then transported to raised beds, where they are dried in high sun for one month.

The staff turn the lots regularly to ensure even airflow and sun contact.

When the cherries have reached a drying level of around 14%, the coffee is then transported to lower altitudes with higher temperatures, to complete the drying phase.

Once the drying was complete the cherry was separated from the parchment, and the coffee was prepared for export at the Railaco dry mill. 

The remaining cherry was not discarded, rather, it was saved for redistribution as fertiliser to the farmers who grew the harvests.

The Origin

The Familia Gomez coffee from Halvo Coffee Roasters originates from the Cauca region of Colombia.

When her husband passed away over a decade ago, Isuara Martinez wasn’t quite sure what she was going to do about maintaining the family’s 6 hectare coffee farm, located in the prime coffee-growing land in the sub-municipality of Tabor in Timaná, Huila.

She, herself, was already in her 50s and wasn’t up to all the work required to continue farming high quality coffee.

In a development unusual in rural Colombia today, where small farms are increasingly subdivided into ever smaller parcels as they are passed onto the children of a farm’s owner, Doña Isuara’s children decided to help manage their family’s collective.

Some 10 years on, Familia Gomez is a nice example of how coffee growing can be passed on through generations in rural Colombia.

Currently, four brothers and sisters and their families (last name Gomez, after their father) manage the farm, and Doña Isuara manages her own small plot, despite her current age of over 65 years old.

Alvaro, Juan, Gloria and Fabiola now live in different houses on the property, each taking care of different plots but wet processing their days’ pickings together in the farms old and original wet mill.
