Who are Lost Sheep Coffee Roasters?

In 2011 the founders of Lost Sheep quit their careers working long hours to spend a year backpacking across the world.

When they arrived in Melbourne, Australia, they discovered Australian-style coffee and instantly knew they had to bring this style of coffee back to the UK. They didn’t realize it at the time, but in that moment, Lost Sheep Coffee was born.

In 2012, they purchased a three-wheeled micro coffee van and pitched up on Canterbury high street.

Their aim was simple: introduce their local community to specialty Australian coffee. In 2014 they upgraded to their Lost Sheep Coffee Pod and in 2015 they opened a second location in Ashford, at the McArthur Glenn Designer Outlet.

In 2017 they upgraded their Canterbury Pod and opened what would become their award-winning specialty coffee roastery in Whitstable, Kent.

The Origin

The Joia Rara coffee from Lost Sheep Coffee Roasters originates from the Minas Gerais region of Brazil.

Owned and run by father son Duo,  Danilo Barbosa and Son Vitor Barbosa. In 2021 they won cup of excellence in Brazil for Natural processed coffee!

Peaberrys are a natural defect, but are often harvested separately as they have higher sweetness and acidity and typical Brazilian coffee.

This lot is 100% Acauã, a hybrid variety originating from the crossing of Mundo Novo and Sarchimor. Acauã is highly sought after by Brazilian coffee farmers, as it is very productive, disease-resistant, and has the potential for great cup quality.

After harvest, cherry is delivered to the farm’s processing center, where it is placed in 200L barrels to ferment anaerobically for 100 hours. Filling and turning the fermentation barrels is a big ordeal, requiring 6 to 12 people to produce a 40 bag lot. Once fermentation is complete, cherry is laid on patios to dry. Cherry is raked frequently to ensure even drying. It takes approximately 12 to 15 days for cherry to dry.
